I'd have a track week at silverstone where they teach you to drive a Formula 1 car, then at the end of the week you get to drive either:-

1994 Williams Rothmans F1 Car
1998 Jordan B+H F1 Car
2002 Jaguar F1 Car

That would be my dream gift.
