that is a tough one, as Im biased towards the older 911's like mine.

Obviously tubo is easier in terms of getting power relatively cheaply, but I prefer NA and the challenge of getting every lost drop of power per litre. I think the older 911's are relatively simple to work on and if you go for a 3.2 with motronic engine management then it becomes so much more tunable than the very early ones.
