intake and exhaust on 1999 chrysler 300m

ok, I have 1 1999 Chrysler 300m , 3.5 v6 high output motor, I had it rebuild and I have a custom exhaust, no cats, and I custom in take, everything is new as for the engine, now the problem is this, everytime I start the car up, its runs ok, not as much power as before, and then when it gets warm, temperature almost to half way, then it idles up and down, sometimes then stalls, or when u start to stop it at a stop sign, it idles down below 500 rpm, and then stalls, and then it lacks power, like there is something holding it back, it has 4 o2 sensors, one before the cat, one after, on both sides, does anyone have an idea what that might be? would it be the cats, because I deleted them, someone told it might be the pressure being able to build up, could someone please help me? the pistons and internals are stock, just everything new, started to get bigger pistons, but didn't know how that would effect the compression, etc.
