Changing my car seat

Yes it is fairly easy to do. You will need to disconnect the air bag trigger which is located under the seats. New seats will come with a subframe which bolts straight into the car. The annoying thing is that whilst you can get nice front seats - the rears are nearly impossible to upgrade.

you may need to get a conection for the airbag, normally a loop of wire with a resistor in it, otherwise the dash might start lighting up saying an airbags missing. might be worthwhile giving a supplier of the seats a phone to see what they say.

Get the computer from the A3 and gearbox if you can, you may need to get the engine mounts from a Cupra R but with those everything should fit. The Cupra R essentially has the same 1.8T block as all the other VAG group cars so I can't see too much of a problem although you may not find parts very easily as VAG cars are so rare in Brunei.
