You need to have a thorough grasp of the time involved in each job and charge sufficient money to cover the cost of the job. You need to include the hours on the phone ordering and chasing up parts.
At first you might need a sideline to keep the money rolling in. Tyres is a good option - then as the modification of cars side of the business expands you can specialise in that.
