Questions questions. You are right in your thinking!
The V engines are smoother than straight ones and the more cylinders the more smooth any engine is.
More valves = better. Bigger valves = better still (Go figure the 20v VAG 1.8T engine an inline 4 cylinder with 3 intake valves and 2 exhaust valves per cylinder!)
Both engines produce similar power V's do it smoothly.
You've not mentioned the W engine layout or the Boxers so I'll let someone else go there!
